Our chef draws inspiration from the region and the changing seasons to create truly incomparable taste experiences. Every dish delights with subtle nuances, thoughtful details, and an authenticity you can genuinely savour.
A feast for the senses
The call of the mountains led me to South Tyrol. After working with renowned chefs such as Schneider, Falser and Bartolini, I have been leading the GRANVARA® team since 2022 – a kitchen that blends regional flavours with an international spirit.

My mentors:
• Chef Heinrich Schneider (Terra Restaurant – 2 Michelin stars)
• Chef Theodor Falser (Restaurant Engel – 1 Michelin star)
• Courses with Chef Terry Giacomelli (1 star), Chef Fabrizio Mellino (2 stars), as well as Chef Giuseppe Molaro (1 star) and Giuseppe Iannotti (2 stars). In April 2024, I also spent one month with Chef Enrico Bartolini (3 stars) to gain unique experience.
