... but the call of the mountain was stronger than the sea...
So I decided to move to South Tyrol, where I gained several seasons of experience.First in 3-4 star hotels, then in renowned hotels and starred restaurants.
These include Chef Heinrich Schneider (Terra Restaurant – 2 Michelin stars), Chef Theodor Falser (Rist. Engel – 1 star), courses with Chef Terry Giacomelli (1 star), Chef Fabrizio Mellino (2 stars) as well as Chef Giuseppe Molaro (1 star) and Giuseppe Iannotti (2 stars). In April 2024 I also had the opportunity to work, for a month, with Chef Enrico Bartolini (3 stars) being able to gain unique experiences with him.
Since 2019 I have been part of the brigade of the GRANVARA® Relais & SPA Hotel * * * * * , where I was then able to concretize my experiences. Since December 2022, I have been responsible as kitchen chef of a brigade of 10 people. And I have put together an excellent team that works with enthusiasm (which is fundamental in our work) with a single goal – to improve every day by always finding new gastronomic limits to cross. The search for the best regional and local products is fundamental in all this.
Traditional cuisine with a Mediterranean-international touch is our goal.
